A beer garden is a grease and sugar job

Spilled beer and soft drinks leave sugars that go black and sticky and then feed mould. Food service adds grease, and grease on paving is both a slip risk and the reason a general purpose patio clean does not fix a pub terrace. It needs a degreaser and dwell time before anything else happens, and the tables, benches and parasol bases need doing at the same time or the clean paving just shows up the furniture.

The areas that actually get complained about

• Frontage paving and the entrance, which is what sets expectations before anyone is through the door.
• Smoking areas, where ash, tar and cigarette residue stain paving and walls.
• Bin and keg stores, where the issue is smell, drain flies and the state of the drain rather than appearance.
• Kitchen extract areas and the paving beneath them, which collects airborne grease.

Airborne grease from an extract lands on the paving and the walls below it, and it builds a film that holds dirt and gets slippery. It also draws pests. Cleaning it is partly about how the place looks and partly about not giving an environmental health officer something to write down, so it is worth doing on a schedule rather than when it becomes obvious.

Grease, food waste and the drain interceptor

A pub yard washes off fats, oils and grease as well as dirt, and FOG going into the foul drain is what blocks it and what an inspector asks about. We degrease into the trap rather than flushing it through, clear the gully while we are there, and will tell you if your grease trap looks like it needs emptying rather than cleaning around it.

Food hygiene adjacency

The paving under a kitchen extract, the bin store and the keg drop are all areas an environmental health officer will look at, so they get treated as hygiene areas rather than as cosmetic ones: degreased, sanitised and the drainage cleared.
